Research Synopsis
As faculty in the teaching stream, Dr. Gurfinkel's academic activities were focused on the undergraduate teaching of the nutritional sciences. Her goals were to increase the level of active learning in the classroom and to provide students with the tools to critically evaluate nutrition information.
